LOBSTER 

We offer lobster rolls made with either 60g or 100g of wild-caught lobster. Our focus is on the knuckle and claw meat, which we believe has the sweetest flavour. The lobster is directly sourced from trusted fishermen in the North American Sea, specifically Maine. It is carefully steamed and de-shelled before being shipped to Australia for our delicious Lobster Rolls.

TIGER PRAWNS

Our prawn rolls feature 100g of wild-caught tiger prawns. These prawns, highly valued in Australia, are known for their generous size, delightful sweetness, and unique appearance. They are responsibly harvested from the northern waters and are a delicious highlight in our Prawn Roll.

BUNS

Early Rise Baking started in 1918. The Stevenson brothers, who are the present caretakers of their family's baking legacy, have a deep-rooted passion for baking, with flour running through their veins. With a rich heritage of upholding quality and consistency, they are dedicated to passing on their love for baking to the fourth generation and beyond. We proudly use their famous brioche top-split bun in our offerings.
